It is a short job done properly and a dangerous one done casually. A freestanding cooker connects through a bayonet fitting and an approved flexible hose with a restraining chain, positioned so the hose cannot foul the back of the appliance or sit against a hot surface. A hob is connected rigidly and tested. Either way the installation is tightness tested afterwards, and the appliance is checked for correct flame picture and gas rate.
Ventilation is an assessment, not a formality. Gas cooking appliances need adequate air for combustion and an openable window or extraction, and the requirement scales with the appliance's total heat input. A large range cooker in a small, tightly sealed modern kitchen is exactly the situation where this needs checking rather than assuming.
The check that most often finds a problem is on the existing installation rather than the new appliance. Old bayonet fittings that have been painted over, hoses well past their service life, isolation valves that no longer close, and gas pipework that was undersized for the appliance now being connected. All of it is straightforward to correct, and all of it is worth knowing.
For a kitchen refit, coordinate the gas work with the fitters rather than leaving it to whoever is on site at the end. Cooker positions decided on a drawing occasionally turn out to need the gas supply re-routing, and it is much easier to move a pipe before the units are fixed.
Disconnection deserves a mention too: an appliance being removed must be capped off properly at the point of supply, not left with a closed valve and an open bayonet. It takes minutes and it removes an obvious risk in a house where the kitchen is being worked on.
